Are there fats that help us achieve our ideal weight?” God-made fats help you lose weight! Human-made fats hinder your weight loss and health journey. To reach a higher level of health, consume one tablespoon of organic, cold-pressed fruit fats or grass-fed dairy fat with each meal. FAT DOESN’T MAKE YOU FAT When I was in elementary school, the administration physically assessed all the students once a year. I was an above-average athlete, so my physical abilities were rarely questioned. One day, I remember standing in line, waiting to be weighed. My school had two sixth-grade teachers, the only male teachers there. The other sixth-grade teacher’s name was Mr. Leitz. I don't think he ever liked me. Now that I think about him, he gives me a few other stories to write about in the future. Anyways, we were all getting weighed. He was using an old-time doctor's scale. He would play with the balance and shout the student's weight to someone recording them. I stood there listening as the girls weighed 60 to 70 pounds. Everyone was typical back then. After we were weighed, we would run off to recess. I got on the scale, and Mr. Leitz yelled out my weight. “Mac weighs 110 Pounds! Wow, you're fat, Mac." I heard gasps and chuckles behind me. I remember looking around at the other students. Then I looked at him; he had this military-like look on his face, the look sergeants give recruits in the movies. He wore a flattop haircut. You probably know the type if you're over 60. I was embarrassed. When I turned to look at the line, I saw a girl I had a crush on. She didn't gasp or chuckle, but I could tell she was embarrassed for me. I walked toward the playground with tears running down my cheeks. I didn't pursue my crush after that. If a “who-said” told me that I was fat, I must be fat, and I knew that no cute girl would want a fat boyfriend. Now, that I was fat, the first thing I went off and did was go on a twelve-year-old diet plan. I started watching my fat intake. In the sixties, we were all told that eating fat was what made us fat. If I avoided fat, I would lose weight. I cut back on my fat intake and had my mom purchase margarine. That's what the television commercials told us to do. The commercials told us that we were fat because we were eating the worst kind of fat, saturated fat, which is found in butter and steaks. My mother switched from cooking with lard to cooking with Crisco to help me with my diet. Of course, the low-fat diet successfully made me store fat. If you looked at pictures of me before Mr. Leitz told me I was fat, it was obvious that I wasn’t fat. I was athletic. If you look at pictures after he told me I was fat, I am what my mom called husky. “Like estrogen dominance should be called progesterone deficiency, a low-fat diet is another name for a high-carbohydrate diet.” Eating a high-carbohydrate diet caused me to store fat, and my stored fat makes the female hormone estradiol. Estradiol makes breasts in both girls and boys. I was now not only ashamed of being overweight, which I wasn’t, but also of being shamed for having boy-boobs. I struggled with this shame until I was in my thirties. Man boobs, well, in my case, boy boobs, destroyed my body confidence, especially if I had to take my shirt off. I did not rid myself of those boy-boobs until I became a dedicated weight lifter. They're still there, but now they look like a bodybuilder's chest instead of boobs that should be bra-ed. When my wife went into menopause, forty years after Mr. Leitz told me I was fat. At that time, most diet gurus were still preaching from soapboxes about low-fat diets. INSULIN RESISTANCE AND AGE-RELATED WEIGHT GAIN As you probably know by now, I developed a menu for myself and my diabetic patients back in the 1990s. Years later, after trying nearly every popular diet on my wife’s menopausal weight gain—and on my menopausal patients—with little success, I decided to try that old diabetic menu instead. Voilà . It worked. The key for my diabetic, menopausal, and andropausal patients was to keep insulin bottomed out and glucagon topped out. Have you read this a few times? "In my view, this menu worked for a simple reason: aging and hormonal decline increase insulin resistance. As we move through menopause and andropause, we don’t just gain weight, we lose insulin sensitivity year by year, making fat loss progressively more difficult." As I developed the Meso Menu, I noticed that certain fats helped my patients lose weight faster, while others hindered weight loss; in fact, these “bad” fats made them gain weight and become even more unhealthy. PROCESSED GOD-MADE FATS As I researched fats and found they were all processed to some degree, I discovered that God-made fats were processed solely by pressing or squeezing to extract the oil, or by churning milk and letting the fat rise to the top, in the case of butter and ghee. No harsh chemicals were used in processing the God-made fats. I also discovered that in most cases, no heat was used to process Godmade fats. When heat is used, the fats are denatured. “Denatured means that by chemical or physical means, the molecular structure of a food is changed from its original state.” When fats are simply made by pressing fruits, they are called virgin oils. VIRGIN OILS Virgin oils include olive, avocado, and coconut, meaning no heat or chemicals were used to extract the fat. The oil is pure and unrefined. “If you want to lose weight faster and be healthier, it is important to purchase organic cold-pressed virgin oils.” SAUTRATED FATS We also recommend using butter and ghee. Please do not use margarine or butter that you can't believe is not butter. They are made from vegetable oils. BUTTER I love grass-fed butter. And I know it’s a saturated fat, but for goodness sake, we need saturated fats to lose weight and feel great. Science has shown that we need saturated fats, such as those found in butter, because saturated fats are needed to:
Oh, that’s right, it’s all about the hormones, so saturated fats are super important to us as we age. So, what is butter? Butter is cow's milk, here in the United States, churned until the fat separates, resulting in a smooth, creamy spread. Butter from grass-fed cows is lighter in color. “Always purchase butter churned from the milk of grassfed cows.” Grassfed butter has a higher fat content, tastes better and should not have added colors. When I cook, which is rare, I nearly always use butter. GHEE There is a better form of butter called ghee. What is ghee? Ghee is processed butter. Ghee has been used for thousands of years and has been made the same way throughout that time. Ghee, in essence, has passed the test of time. Ghee is made by melting butter. The butter separates into liquid fats and milk solids. The milk solids are then removed. This makes ghee have less lactose than butter. If you are lactose intolerant, ghee is the best choice because most of the lactose is removed.
