THE SLENDERNESS SERIES The Protein Days“Doc, are you saying that to lose my middle-aged weight, and the waist that came with it, all I have to do is eat gourmet meals made from God-made foods that bottom out insulin and top out glucagon… and only eat when I’m hungry?” You’ve been paying attention. And yes. Yes. Yes. And yes. “So, Doc—how do I bottom out insulin and top out glucagon?” Let me tell you a story. The Kitchen IslandI was sitting in a coffee shop having a coffee with some mutual friends. One of them had brought along someone I didn’t know. She kept looking at me. I’d introduced myself when I sat down, but her stare wasn’t rude. It was the look of someone trying to place a familiar face. I got up to refill my coffee. I had a feeling that while I was gone, she’d ask about me. When I returned, she blurted out, “You’re Doctor Mac. You ran those hormone clinics, right?” I told her I’d retired. “These days I just go by Doc,” I said. “I coach virtually now.” She didn’t hesitate. She told me her hormones were a mess. That no matter what she did, she couldn’t lose weight. Then she surprised me. “You need to come see my house.” The rest of the group lit up immediately. “Doc,” they said, “you’ve got to see this.” Her house wasn’t far. The moment I walked in, I could smell trouble. On the kitchen island, perfectly arranged, were savory oats, rice balls, grits, polenta, and several kinds of bread. She looked proud. “You see,” she said, “it’s all organic. All plant-based. This is all I eat.” I walked past the island and opened her pantry. It was packed. “There’s your problem,” I said. My friends, who were helping themselves to muffins I assumed were made from organic whole wheat flour, froze mid-bite. She looked at me, completely confused. “You never open the pantry,” I said. “Why would I?” she replied. “There’s always something right in front of me.” “Exactly,” I said. “Your body works the same way.” As long as food, especially this kind of food, keeps coming in, insulin stays elevated. And insulin has one job: to open the entrance doors to your cells and invite sugar in. Your cells fill quickly with glucose so it makes glycogen to keep a cushion. Once it has enough glycogen, it turns the rest to fat and sends them to your fat pantries. I pointed to the pantry. As long as insulin is high, your body has no reason, and no permission, to open that pantry. Your hormones feel like a mess because insulin never gets a break, and glucagon, the hormone that opens the pantry, never gets a chance to do its job. I call it the insulin–glucagon seesaw. These grains keep insulin up and glucagon down. Insulin hoards. Glucagon empties. I told my friends, who were all at their ideal weight, that they could take any of her “plant-based” foods home. Whatever was left, throw away. Then I told Alice, my new friend, that I’d be right back. I ran home. When I returned, everyone was still there. I placed boxes on the kitchen island: chicken, steaks, pork, and fish. The room went silent. “Alice,” I said, “eat only this for the next three days—and nothing else. Your pantry doors will open.” I could tell she didn’t get it. I glanced downwards. “The only way you’re going to lose,” I paused, “middle-aged weight… is to bottom out insulin and top out glucagon.” “The most reliable way to do that is by eating clean animal protein—and nothing else. When you do, the pantry opens wide.” Still pointing. “And your body finally uses stored fat as fuel.” With mouths open around the room, I pretended to drop the mic… …and walked out. ​ After forty-six years of practicing health optimization, I’ve learned something that cuts through all the noise: The most reliable way to lose weight, especially for those of us in the third act of life, is to bottom out insulin and top out glucagon. To do that, I have my clients eat nothing but clean animal protein for three days. That’s it. Over the years, I’ve watched patients, now clients, lose as much as 15 pounds in just 3 days by eating this way. And no, I don’t get excited about that initial drop because it just retained water. What does get my attention is what that water represents. Inflammation. That much retained water tells me their body has been under metabolic stress for a long time. Chronically inflamed. Quietly unhealthy. In many cases, far closer to serious trouble than they realized. I don’t say this to scare you, but to be honest. To lose weight when you are middle-aged, it is necessary that you eat a meal that does not elevate insulin, because your fat-burning hormones have waned and may even be nearly nonexistent.
