Please, tell me what it is? EAT LIKE CAROL You remember Tom, the solitary forager who cooked his omelette straight from the land? Good. Now meet Carol. On the 44th floor of a Manhattan high-rise, a Michelin-starred chef wakes on her day off, looks over the skyline, and thanks God. She’s hungry. From her immaculate kitchen, she pulls out pasture-raised eggs, grass-fed butter, and a mix of morels and chanterelles. Her eggs and butter were delivered by GreenChef the day before, the mushrooms chosen by her own hand at the Union Square Greenmarket, where she shops for her restaurant. She starts with the mushrooms. From the hanging rack, she takes down her HexClad sauté pan and warms it over low heat. She melts a pat of grass-fed butter, and it fills the room with its nutty aroma. She tosses in the chopped mushrooms, and they sizzle softly. She sautés them until golden, making sure their moisture has fully evaporated. This way, their flavor is concentrated, and she is assured that there will be no watery omelette this morning. Next come the eggs. She blends them until impossibly smooth, seasons with a pinch of Pink Himalayan salt and freshly cracked Filius Blue pepper, then adds a whisper of​ ​ras el hanout​​, a North African blend whose name means “top of the shop,” created from a merchant’s finest spices. A spoonful of​ ​crème fraîche​​ goes in last, adding luxurious tang and creaminess. She reaches for her favorite nonstick Caraway omelet pan and swipes a stick of butter across the surface. The egg mixture flows in. The edges set gently while she tilts, rotates, and stirs, coaxing soft, delicate curds into existence. When the eggs are nearly set but still tender and custardy, she lays the mushrooms on one-half of her egg pancake and folds the omelette with practiced grace. A brush of clarified butter gives the top a glossy sheen and catches the fresh herbs she sprinkles. A final pinch of flaky sea salt seals the deal. She carries the plate to the table, sits, and lets the city sprawl out before her. During her first bite, she listens as she chews, feels the textures of her perfectly cooked omelet, and notes its colors. Gourmet isn’t about white tablecloths, whisper-only dining rooms, or portions so small you need a magnifying glass. "Gourmet is pleasure brought about by intentional excellence." It’s the decision to treat nourishment as sacred. It’s elevating eating from a basic biological reflex into a daily ritual of joy, beauty, and meaning. One of the biggest fears I hear from the women and men I coach when it comes to optimizing their weight is this: "But isn't diet food boring and bland?” Diets do not work, and the main reason is that they're menus are boring and bland. When foods are boring and bland, you'll be depriving yourself of pleasure, and life isn't about living in a black and white world. It's about colors and flamboyancy. "Nearly every one of us has proven that deprivation diets just don't work." Deprivation will destroy a diet faster than someone placing a bowl of crème brûlée in front of you. If your meals taste like punishment, your brain will revolt long before your waistline does. That’s why I don’t believe in diets. I believe in eating with principles.
